Custard for Everyone

Custard on pie, custard in a trifle, custard on pudding, custard on fruit, custard is for everyone! But, it isn’t really, unless we make it intolerance friendly, so let’s do just that!  These recipes are all gluten and grain free, as always if I can’t eat it, I’m not really interested. First, a simple and thick, classic custard with a sugar-free twist and dairy free option. Second, a dairy-free and sugar-free custard. Finally, a vegan custard option!  You heard it here first, custard for everyone!  All it takes is a little bit of creative problem solving when including everyone with all of their dietary requirements, choices, and preferences.

These custards all go a treat, poured generously over the top of my Cute Christmas Cakes.



Recipe Title – Simple and Thick, Classic Custard

 

Ingredients

  • 3 Egg Yolks
  • 300ml Thickened Cream (or 290ml can of Coconut Cream)
  • 30g Stevia
  • 1 Vanilla Pod
  • pinch nutmeg, optional

 

Method

  • Heat cream and scraped vanilla bean seeds in a small pot over low, don’t allow it to boil.
  • Whisk egg yolks and stevia until pale, thick and voluminous.
  • Gently dribble the heated milk into the yolk mix and continue beating until thoroughly incorporated.
  • Return to pot and continue whisking by hand until thickened and coats the back of a wooden spoon.
  • Stir in nutmeg if desired.

 


Recipe Title – Versatile Runny Custard

 

Ingredients

  • 3 Egg Yolks
  • 250ml Non-dairy milk of your choice
  • 1 Vanilla Bean
  • 30g Stevia
  • 10g (1tbsp) Arrowroot flour or corn flour

 

Method

  • Heat milk and scraped vanilla bean seeds in a small pot over low, don’t allow it to boil.
  • Whisk egg yolks and stevia until pale, thick and voluminous.
  • Gently dribble the heated milk into the yolk mix and continue beating until thoroughly incorporated.
  • Sieve in the flour and ensure thoroughly combined.
  • Return to pot and continue whisking by hand until thickened and coats the back of a wooden spoon.

  


Recipe Title – Vegan Custard

 

Ingredients

  • 150g Dates in100ml Boiling Water then drained
  • 290ml can Coconut Cream

 

Method

  • Blitz dates and coconut cream until smooth in a high powered food processor or blender.
  • Strain and serve.

 


Recipe Notes

While these are all best served warm, they also refrigerate well and keep well for three days.
